Fresh Arctic char is available from late July to early September as the harvest is based upon the migration patterns of the fish. Anadromous Arctic Char migrate to the sea to feed in the summer and return to the fresh water to spawn for the winter. Most fish are caught while they are feeding in the sea or during their return to the local waters. During this short six-week period, fresh Arctic char are packed in ice and shipped daily to southern markets for sale.
In the winter, fish can be frozen on the ice as soon as they are removed from the water ensuring the highest amount of nutrients and taste is retained.
Arctic char are marketed and sold in a variety of forms.

- Cold smoked fillets and sliced
- Hot smoked fillets and portions

- Retort
- Chowder
- Peppered jerky
In any form Arctic char is considered a delicacy that can only be attained in limited quantities. Even though Arctic char are plentiful, conservation is a first priority of Nunavut residents. Fisheries harvest numbers as the market demands ensuring minimal waste of the char and a continued sustainability of the stock.
